Sharing this recipe, which I have received positive feedback on from my most important food critics: my clients 😊. I believe food should always taste good. Balanced eating should never feel boring, or restrictive. If it does, it almost always isn't sustainable.

Pairings:
Kale Caesar (my favorite) - I prefer chopping curly kale for this, but have also tried with baby kale and think it works well. The main difference is that curly kale will hold up so you can dress ahead of time (and even keep prepared in the refrigerator for a quick lunch option during the week). I like to mix in roasted chickpeas, tomato, red cabbage, cucumber, shaved carrot, sunflower and or pumpkin seeds.
Classic Caesar - romaine lettuce (raw or grilled). Add in homemade croutons, roasted chickpeas or baked parm crisps, if desired.
Use as a dipping sauce with raw veggies (cucumber, carrots, celery, bell peppers, snap peas, broccoli, cauliflower, etc.).
Grilled chicken, shrimp, or salmon Caesar salad.
Brussels sprouts Caesar salad (thinly shaved raw or roasted halves).
